When you’re craving pancakes or doughnuts for breakfast, or when your sweet tooth is relentlessly screaming for a treat, don’t shoot your health-focused nutrition goals in the foot by eating processed food that’s full of health-sabotaging ingredients like refined sugar.
Go for these clean, delicious and super simple apple cookies instead!
HOW TO MAKE THEM
These are the easiest cookies you’ll ever make..no mixing, measuring or baking is required!
STEP 1: Remove the core from an apple and slice it into rings (invest in an apple corer like this to make this step a snap!). The apple rings become your cookies.
STEP 2: Smear the apple cookies with a thin layer of your nut or seed butter of choice (sunflower seed butter, almond butter, cashew butter, etc.). Be sure to choose a quality butter without any added sugar, oil, salt or preservatives.
STEP 3: Sprinkle the top of the apple cookies with one or more of the following healthy options to add crunch and flavor:
- Raw walnut or pecan pieces for crunch.
- Dark chocolate chips for chocolate flavor. (My go-to brands for clean chocolate chips are Hu, Equal Exchange and Enjoy Life.)
- Unsweetened shredded coconut for a coconut flare.
- Raw pumpkin seeds for crunch.
- Raw sunflower seeds for crunch.
If you must add more sweetness, use natural sources like organic raisins, a drizzle of pure maple syrup or chopped dates.
ENJOY!
Cheers to enjoying a quick-and-easy breakfast or sweet treat that’s easy to make and bursting with nutrition!
With love and gratitude,
Kandi
