Healthy Candy Corn Cups (Free of Dairy, Gluten & Refined Sugar!)

Some people consider candy corn to be the ultimate fall treat and a staple Halloween candy. But here’s the thing…

Candy corn is a crap storm of refined sugar, corn syrup, artificial colors and synthetic flavors. EW! If you ask me, that is far from a treat.

The goods news is you can make a 100% natural candy corn-inspired treat that’s juicy, delicious and super easy to prepare.

Plus, it’s free of dairy, gluten and refined sugar and supplies you with vitamins, minerals and healthy fat. SCORE!

THE RECIPE

~Yields 4 Servings~

Filling Ingredients:

  • 2 cups of canned organic pineapple chunks, drained
  • 1 cup of canned organic mandarin orange slices, drained

NOTE: Make sure the pineapple chunks and orange slices are canned solely in their own juice with no added sugar or artificial ingredients.

Whipped Cream Ingredients:

Directions:

  1. Chill the can of coconut cream in the fridge at least one night before making the candy corn cups. Open the can and drain the liquid off the top.
  2. Put the can of coconut cream, maple syrup, vanilla and sea salt in a mixing bowl (glass bowls like this work great) and beat the mixture until fluffy. (If you’re in the market for hand mixers/beaters, you can find a great selection HERE.)
  3. Take out 4 glass cups or dessert bowls – you can chill them beforehand if desired. In each cup, add 1/2 a cup of pineapple chunks and top it with 1/4 cup of mandarin orange slices. (You can find a nice selection of fun, stylish and convenient glass dessert bowls HERE!)
  4. Put a dollop of your homemade whipped cream on top of the orange slices.
  5. ENJOY!
