Easy Plant-Based Carrot Cake Bites

These raw carrot cake bites taste like the real deal without all the fuss and baking time involved with making an actual cake. They are super delicious and only require 6 simple ingredients!

They are sweetened naturally with dates, loaded with fiber, vitamins & minerals, and have a nice dose of health-building beta-carotene from the carrots. SCORE!!!

THE RECIPE

RAW CARROT CAKE BITES

~ Makes 16 Balls ~

Ingredients:

  • 1 cup of chopped organic carrots
  • 1/2 cup of unsweetened coconut flakes (If you don’t like coconut or don’t have any on-hand, you can substitute with a 1/2 cup of raw walnuts or pecans.)
  • 1 cup of gluten-free organic rolled oats
  • 1/2 cup of organic dates
  • 1/4 cup of organic sunflower seed butter (or other nut/seed butter of choice)
  • 1 teaspoon of organic Ceylon cinnamon

Ninja Preparation:

  1. Add the carrots to a food processor and blend until finely chopped. Transfer them to a bowl.
  2. Add the coconut flakes (or raw nuts) to the food processor and pulse to form a sandy texture.
  3. Add the oats and dates and process again until a sandy texture forms.
  4. Return the carrots to the food processor and add the sunflower seed butter and cinnamon. Blend until a dough forms.
  5. Shape the dough into tablespoon-sized balls. You should end up with about 16.

Store any leftovers in an airtight container in the fridge for up to 2 weeks.
