THE RECIPE
RAW CARROT CAKE BITES
~ Makes 16 Balls ~
Ingredients:
- 1 cup of chopped organic carrots
- 1/2 cup of unsweetened coconut flakes (If you don’t like coconut or don’t have any on-hand, you can substitute with a 1/2 cup of raw walnuts or pecans.)
- 1 cup of gluten-free organic rolled oats
- 1/2 cup of organic dates
- 1/4 cup of organic sunflower seed butter (or other nut/seed butter of choice)
- 1 teaspoon of organic Ceylon cinnamon
Ninja Preparation:
- Add the carrots to a food processor and blend until finely chopped. Transfer them to a bowl.
- Add the coconut flakes (or raw nuts) to the food processor and pulse to form a sandy texture.
- Add the oats and dates and process again until a sandy texture forms.
- Return the carrots to the food processor and add the sunflower seed butter and cinnamon. Blend until a dough forms.
- Shape the dough into tablespoon-sized balls. You should end up with about 16.
Store any leftovers in an airtight container in the fridge for up to 2 weeks.
