I created this recipe to solve 3 problems:
- Beets are one of the most nutritious foods around, yet not a lot of people eat them on a regular basis…or at all.
- Dip is one of those condiments that tends to be very unhealthy when you buy it in stores. It’s typically loaded with unhealthy fat and unnatural ingredients.
- Many people do not consume enough fiber, which can lead to a host of digestive health issues.
The solution? A delicious dip based with beets and fiber-rich beans that’s super easy to make!
This dip presents like hummus, but it doesn’t contain tahini so it has a much milder flavor. It’s also silky smooth.
Even if you don’t like beets, you may be pleasantly surprised by the flavor profile in this dip. It’s so important to at least give beets a try, because the health benefits they deliver are amazing! You can read all about them HERE.
The best thing about this dip is that it’s bursting with nutrition like disease-fighting antioxidants, healthy fat and fiber.
THE RECIPE
~ Makes 1.5 to 2 Cups ~
Ingredients:
- 15-ounce can of garbanzo beans, AKA chickpeas (Make sure the can has a BPA-free lining.)
- 2 medium-sized beets, peeled and cooked until tender
- 1/4 cup of extra virgin olive oil
- 1 tablespoon of water
- 1/2 – 1 tablespoon of garlic powder (The amount depends on how much garlic flavor you prefer. I go for the full tablespoon.)
- Himalayan pink salt and black pepper to taste
NOTE: Use all organic ingredients for optimum health benefits! You can buy whole organic beets that have already been peeled and cooked to save time.
Preparation:
- Drain the liquid from the can of beans. This liquid is known as “aquafaba” and you may want to save it, because it works as a thickening agent in recipes like this plant-based mayo.
- Place the beans and the rest of the ingredients in a high-speed blender and blend until smooth.
- Taste and add more salt and pepper if necessary.
- Enjoy!
LEFTOVERS: Store in an airtight container in the fridge for up to 5 days.
This dip tastes great with veggies, crackers, chips, on top of salads and as a sandwich spread. I like to top it with a few sprinkles of organic dill to give it a pickled beet vibe.
As you can see in the photo below, this dip ends up looking a bit like chocolate soft serve ice cream. But I promise, it tastes like a delicious savory dip.

I buy beets (organic only) that have already been peeled and cooked, so they’re ready to eat. It saves lots of time!
