Simple Radish & Cucumber Salad

Radishes are one of those vegetables that don’t get a lot of play in day-to-day eating for most people. I’m on a mission to change that, because radishes are at the top of the list of “food is medicine” veggies.

Radishes are a cruciferous vegetable that contain sulfur, which naturally repels pathogens in the body and helps kill off intestinal worms and other parasites. And that’s just the tip of the iceberg:

  • Radishes help keep arteries and veins clean, creating a protective barrier in blood vessels so plaque doesn’t adhere to their linings.
  • Radishes are excellent for helping to prevent heart disease and other cardiovascular issues by increasing good cholesterol and lowering bad cholesterol.
  • The skin of the radish helps repel virtually every type of cancer, which makes radishes a go-to food for helping to prevent disease.
  • Radishes are very restorative for the kidney, liver, pancreas and spleen.

I’ve worked with several people who want to enjoy the health benefits of radishes, but don’t really know how to incorporate them into their diet. Here’s a super simple and delicious recipe to help make it happen!


THE RECIPE

SIMPLE RADISH & CUCUMBER SALAD

~ Makes 4 Cups ~

Ingredients:

  • 2 cups of thinly sliced radishes
  • 2 cups of thinly sliced cucumbers
  • 4 tablespoons of minced dill
  • 1/4 of a fresh lemon, juiced or 1/2 tablespoon of bottled organic lemon juice
  • 1/8 teaspoon of Himalayan pink salt

Preparation:

  1. Put all the ingredients in a bowl and toss well.
  2. Chill in the fridge for 10-15 minutes and enjoy!

This salad is light, refreshing and very tasty! It works great as a small meal, an appetizer or a topping on a bed of fresh salad greens.
