Healthful & Delicious Pumpkin Bread Recipe (No Dairy, Gluten or Refined Sugar!)

Every year when fall rolls around, there seems to be an explosion of pumpkin-flavored everything…particularly pumpkin bread!

Unfortunately, most pumpkin breads you’ll find in restaurants and stores are a health-sabotaging sugarfest with a side of processed flour and artificial ingredients.

If you knew what was actually in most commercially-made pumpkin breads, it would seem like more of a trick than a treat!

That’s why I’m excited to hook you up with the simple and delicious pumpkin bread recipe below. Not only will it rock your tastebuds, it’s totally free of dairy, gluten and refined sugar.

THE RECIPE

~Yields 1 Loaf~

Dry Ingredients:

Wet Ingredients:

  • 4 Eggs (from organically-fed chickens that were allowed to roam free)
  • 3/4 Cup of Pure Pumpkin Puree (like this)
  • 1/4 Cup of Coconut Oil, Melted (like this) + a little extra to grease the bread pan
  • 1/4 Cup of Pure Maple Syrup (like this)

NOTE: Invest in organic ingredients to avoid consuming toxic chemicals like pesticides that are used to grow non-organic harvests.

Directions:

  1. Preheat the oven to 325° F.
  2. Combine the dry ingredients in a medium bowl and mix well. Set the dry mixture aside.
  3. Combine the wet ingredients in a separate large bowl and mix well.
  4. Add the flour mixture to the egg mixture in the large bowl and mix everything until it is blended and smooth.
  5. Pour the batter into a small loaf pan that has been greased with coconut oil. (I recommend using a glass bread pan like this for nontoxic cooking. Plus, it’s super easy to clean and doesn’t hold stains or smells like metal pans!)
  6. Bake for about 45 minutes, or until you can insert a toothpick in the middle of the loaf and it comes out clean.
  7. ENOY!
