No-Bake Brownie Bites (Free of Gluten, Dairy & Refined Sugar)

I love being able to enjoy a sweet treat comprised of whole, plant-based foods that supports a clean diet. I especially love it when that sweet treat requires ZERO baking time!

This easy recipe for no-bake brownie bites is one of those sweet treats!

It’s based with coconut flour, which is loaded with fiber that’s excellent for your digestive system. And the chocolate flavor comes from a superfood called cacao, which is bursting with disease-fighting antioxidants!

Not only do these brownie bites make a great dessert, you can also enjoy them as donut holes for a filling breakfast with a kick of sweetness.

THE RECIPE

NO-BAKE BROWNIE BITES

~ Makes 16 to 24 Bites  ~

Ingredients:

  • 3/4 cup of coconut flour
  • 1/2 cup of coconut milk (or other plant-based milk like almond or hemp milk)
  • 1/3 – 1/2 cup of pure maple syrup (Start with 1/3 cup and only add more if you absolutely must increase the level of sweetness.)
  • 1/4 cup of cacao powder
  • 1 teaspoon of pure vanilla extract
  • 1/4 teaspoon of Himalayan pink salt

Preparation:

  1. Line a baking sheet with unbleached parchment paper (like this) or a food-grade silicone baking mat (like this).
  2. Put all the ingredients into a food processor and process until there is a uniform dough. You can also mix the ingredients by hand in a mixing bowl (which is what I did)…just know the texture will be a bit grainy as illustrated in the photo below.
  3. Use your hands to roll the dough into bite-sized balls and place them on the lined baking sheet. The exact size of the balls is up to you. I opted for donut hole-sized balls and ended up with about 16. You could make several more by making them smaller.
  4. Optional: If you’d like a chocolate drizzle over your brownie bites or if you’d like to coat them completely in chocolate, use this easy DIY chocolate recipe.
  5. Place the baking sheet in the freezer to allow the brownie bites to set for about 30 minutes. Store any leftovers in an airtight container in the fridge for up to a week.

Here’s a look at the finished product. Again, I mixed the ingredients for these brownie bites by hand, which is why they’re a bit grainy. You can smooth the texture by using a food processor:
