Nutty Carrot Noodle Recipe That’s Bursting With Flavor!

It’s likely you’ve heard of zucchini noodles (“zoodles”), since they have become a very popular gluten-free (and healthier) alternative to wheat-based pasta.

But have you heard of carrot noodles? OMG, they are so satisfying and delicious!

That’s why I’m super excited to share this simple, mouth-watering carrot noodle recipe with you in hopes that you’ll give them a try (if you haven’t already).

This recipe is BURSTING with flavor and is loaded with clean, health-enhancing ingredients. It’s nutty, refreshing and very filling.

HEADS UP: You’ll need a vegetable spiralizer to turn your carrots into noodles. I use and love this one, which you can score HERE on amazon.

Or, you can simply use a vegetable peeler to shave them into ribbons. They won’t be as “pasta-like” this way, but you’ll still get the delicious flavor experience.

Now let’s do this!


THE RECIPE

~ Yields 2-3 Servings ~

INGREDIENTS:

For the noodles:

  • 6 Large Carrots, Washed & Peeled
  • 1 Large Cucumber, Washed
  • 1/2 Cup Cilantro, Finely Chopped
  • 2 Scallions, Chopped

For the sauce:

  • 1/4 Cup of Almond Butter (like this) or Sunflower Seed Butter (like this)
  • 2 Tablespoons of Coconut Aminos (like this)
  • 2 Tablespoons of Apple Cider Vinegar
  • 1 Tablespoon of Coconut Sugar (like this)
  • 1/2 Teaspoon Ground Ginger (like this)
  • 1/2 Teaspoon Garlic Powder (like this)
  • Juice of 1/2 a Lime

PREPARATION:

To make the noodles:

  1. Spiralize the carrots and cucumbers into pasta, placing them into separate bowls. Or, use a vegetable peeler to shave them into ribbons.
  2. Bring a pot of water to a boil and blanch the carrot noodles for just 1-2 minutes to tenderize them. Drain them immediately and let them cool.

To make the sauce:

Add all the ingredients to a blender and blend until smooth.

To combine the noodles and sauce:

  1. Combine the cooled carrots and uncooked cucumbers in a large bowl.
  2. Drizzle the sauce over the noodles and gently toss.
  3. Sprinkle the pasta with the cilantro and scallions.
