Sometimes when I’m craving pancakes, I just can’t bring myself to go through the process of making them.
After making the batter, I stress over what size to make them. A couple big ones? A few medium-size ones? A bunch of small ones? And then I have to stand over the stove waiting (for what seems like an eternity) for the batter to cook in the pan enough to flip the cakes without them falling apart, but not too much or they’ll burn. PASS!

MAKE A BATCH OF DELICIOUS OVEN-BAKED DUNKING STICKS!
These dunking sticks are totally plant-based, super filling and LOADED with health-building nutrition (protein, healthy fat / omega 3’s, fiber, vitamins, minerals and antioxidants). It’s basically like eating sticks of pancakes, and they taste amazing dunked in pure maple syrup. The beauty is they are made in the oven, so there’s no annoying “flip” time or technique required. SCORE!

THE RECIPE
BLUEBERRY DUNKING STICKS
~ Makes 12 to16 Sticks ~
Organic Ingredients:
- 1 flax egg (1 tablespoon of flaxseed meal + 3 tablespoons of water)
- 1.5 cups of coconut milk or other plant milk of choice
- 1.5 teaspoons of apple cider vinegar
- 1 cup of gluten-free old fashioned rolled oats
- 2 tablespoons of chia seeds
- 2 tablespoons of hemp seeds
- 1/3 cup of garbanzo bean (AKA chickpea) flour
- 2 teaspoons of aluminum-free baking powder
- 1 cup of blueberries, fresh or frozen (I use frozen wild blueberries.)
- Optional: Ceylon cinnamon for dusting on top
Ninja Preparation:
- Preheat the oven to 350 degrees F and line an 8×8 brownie pan with unbleached parchment paper. (Use glass, stainless steel, ceramic or cast iron bakeware – avoid aluminum, because it’s a neurotoxin.)
- Prepare the flax egg by mixing 1 tablespoon of flaxseed meal with 3 tablespoons of water. Allow the mixture to “gel” for at least 10 minutes before adding it to the batter.
- In a small bowl, combine the coconut milk with the apple cider vinegar to curdle.
- Add the oats, chia seeds and hemp seeds to a high-speed blender or food processor and blend until you achieve a flour-like consistency.
- In a large mixing bowl, combine all the ingredients EXCEPT the blueberries and mix well. Lastly, add the blueberries and fold them into the batter.
- Pour the batter into the lined pan and spread it out evenly. Optional: Dust the top of the batter with Ceylon cinnamon.
- Bake at 350 degrees F for 30 minutes. Remove the pan from the oven and allow the loaf to cool slightly before carefully pulling the parchment paper upward to lift the loaf out of the pan. Cut the loaf into 12-16 sticks and enjoy with pure maple syrup.
