When you’re short on time in the morning, I know how tempting it can be to grab something quick for breakfast. Unfortunately, most “grab-n-go” options involve a package with a laundry list of unhealthy ingredients and a hefty serving of refined sugar. In addition to containing health-sabotaging ingredients, these processed options will not keep you full for long, if at all, because they contain minimal nutritional value. (There’s a big difference between being fed and being nourished.)
I have good news! You can make delicious and filling pancakes in a matter of minutes with just two natural ingredients that are free of dairy, gluten and refined sugar. SCORE!
2-INGREDIENT PANCAKE RECIPE
Below are the 2 simple ingredients you need to make these delicious pancakes:
- 2 eggs (preferably from organically-fed, free-range chickens)
- 1 very ripe banana (preferably with brown spots)
Directions:
- Choose your pan. I prefer to make 2 pancakes that are about 6 inches in diameter using a small skillet like this. You could also use a large skillet to make one big pancake. Or, you could make silver dollar pancakes using a pan like this. (I find non-toxic ceramic cookware to work the best for cooking pancakes and many other things – you can find an outstanding selection with unbeatable quality from Xtrema here. - Warm your chosen pan over medium heat and then coat it with coconut oil.
- As the pan is heating, put the banana into a mixing bowl and mash it well with a fork. Then, add the eggs and beat them together with the banana until you have a smooth batter. Or, you can throw the banana and eggs into a high-speed blender (I recommend the Blendtec for exceptional performance) and blend until smooth.
- Add the batter to the pan and let it cook until the bottom is firm. Then, flip it and cook until the underside is done.
- Optional: Garnish with fresh berries.
- ENJOY!
Optional Additions:
- The pancakes should have plenty of natural sweetness from the ripe banana. If you must add syrup, however, opt for a quality maple syrup that’s pure and organic like this one.
- You can add a few dashes of cinnamon to the pancake batter or sprinkle it on top of the cooked pancakes for a cinnamon-tastic flare.
- If you like the flavor of vanilla, toss a teaspoon of pure vanilla extract into the batter mix before cooking.
