No-Bake Pumpkin & Oat Ball Recipe

I love, love, love it when I find a recipe for a delicious and healthy sweet treat that requires ZERO baking time!

You too? Then you’re going to love this healthful plant-based recipe for no-bake pumpkin & oat balls!

Not only will these balls of YUM rock your tastebuds, they are free of gluten, dairy and refined sugar. And they are loaded with vitamins, minerals, antioxidants, fiber, protein and some healthy fat. SCORE!

This sweet treat is delicious at any point of the year, but it’s especially awesome in the fall when pumpkin-flavored everything is on your mind.

With this recipe, you can get your sweet pumpkin treat fix while honoring your health.

Plus, these pumpkin and oat balls make a great treat to share at holiday parties, family gatherings and for classroom festivities.


THE RECIPE: NO-BAKE PUMPKIN & OAT BALLS

NO-BAKE PUMPKIN & OAT BALLS

~Makes around 40 Balls~

Dry Organic Ingredients:

  • 3 cups of old fashioned gluten-free rolled oats, uncooked
  • 1 cup of raw pumpkin seeds AKA pepitas
  • 2 teaspoons of pumpkin pie spice
  • 1/2 teaspoon of Ceylon cinnamon
  • Optional ingredient for a chocolate flare: 1/2 cup of chocolate chips (Hu, Equal Exchange and Enjoy Life are my preferred brands.)

Wet Organic Ingredients:

  • 15-ounce can of pure pumpkin puree (NOT pumpkin pie filling)
  • 3/4 cup of tahini (sesame seed butter), sunflower seed butter, cashew butter or almond butter
  • 2/3 cup of pure maple syrup

Directions:

  1. In a mixing bowl, combine the dry ingredients (oats, pumpkin seeds, spices and optional cacao nibs) and mix well.
  2. Add the remaining ingredients (pumpkin puree, seed or nut butter, syrup and vanilla) to the bowl and mix well.
  3. Put the bowl in the refrigerator for a minimum of 30 minutes in order for the batter to set.
  4. Roll the mixture into balls and place them in a glass dish that can be covered with a lid. The size of the balls is up to you. If you go with a smaller size that’s about an inch in diameter, you should end up with around 40 balls.

These balls will keep in the fridge for about a week. They will keep in the freezer for two weeks or more.
