Have you ever wished you could just suck the peanut butter filling out of a Reese’s peanut butter cup or Easter egg candy?
Better yet, would you like to enjoy a serving of it without destroying your clean-eating goals or consuming any actual peanuts?
Good news! You can make your own “peanut” butter filling balls with ZERO peanuts and just 5 clean and simple ingredients, and they taste just like the real thing.
These balls make a great treat for holidays like Easter and an easy snack to take with you on the road.
THE RECIPE
~ Yields 16 Balls ~
Ingredients:
- 1/2 cup of creamy sunflower seed butter (You can also use creamy almond butter if there are no nut allergies in your household.)
- 3 tablespoons of coconut flour
- 1 to 1.5 tablespoons of pure maple syrup (Start with 1 tablespoon and only add more if you must have it sweeter.)
- 1/2 teaspoon of pure vanilla extract
- 1/8 teaspoon of Himalayan pink salt
Preparation:
- Mix all the ingredients in a bowl until smooth. You may need to use a fork to mash things up a bit.
- Put the bowl with the dough in the fridge to chill for 15 minutes.
- Remove the dough from the fridge and use your hands to roll it into 16 equal-sized balls.
LEFTOVERS: Store any leftovers in the fridge in an airtight container, or they will dry out.
These balls are one of my favorite snacks to grab for the road. So yummy!
