Healthy Dairy-Free/Gluten-Free Brownies That Will Blow Your Mind!

Would you believe me if I said you CAN enjoy dessert without shooting your healthy diet in the foot? What if I said you can have a delicious dessert that’s packed full of healthful goodness like fiber, protein, iron and magnesium while being totally void of dairy and gluten? Well guess what….you CAN with this awesome brownie recipe! It’s all natural, super simple and contains recognizable ingredients you’ll want to have in your kitchen anyway. SCORE!

THE RECIPE

RECIPE NOTES:
~Use organic ingredients and eggs from organically-fed, free-range chickens if possible. If you follow a vegan diet, you can replace eggs with ground flaxseeds and water (2 tablespoons of ground flaxseeds + 3 tablespoons of water = 1 egg).
~This stainless steel can strainer makes draining the liquid from cans of beans a snap! (Works great for tuna and other canned foods, too!)
~If you like nuts in your brownies, crush up a  handful of these raw walnuts and thrown them in the mix!

Directions

  1. Preheat the oven to 350° F.
  2. Grease an 8 x 8 baking pan with coconut oil. (I recommend investing in a glass baking pan like this one, because glass bakeware eliminates the worry of any toxicity from metal / coated pans, doesn’t hold stains or smells and is much easier to clean!)
  3. Blend all the ingredients together until smooth and pour into the baking dish. (I highly recommend investing in a high-performance blender like this one to make blending a snap! I also recommend getting a set of quality flex spatulas like these for easily scraping all the batter out of your blender.)
  4. Bake for 40 minutes or until you can insert a toothpick in the center and it comes out with no batter on it.
  5. Allow to cool for 10-15 minutes and ENJOY!
