This veggie slaw makes a great addition to any bbq, potluck or other social gathering.
It’s a crisp, colorful and tangy side dish that also tastes great as a topping on tacos and black bean burgers.
Better yet, it doesn’t require any mayo or unhealthy elements like sour cream, making it a clean dish that supports a healthy diet.
All you need are cabbage, bell peppers, onion, coconut vinegar and seasoning to make the nutritious magic happen.

THE RECIPE
~Yields about 8 servings at 1.5 cups each~
Ingredients:
- 1 medium head of green cabbage, shredded
- 1 medium red bell pepper, chopped
- 1 medium yellow or green bell pepper, chopped
- 1 medium red onion, chopped
- *1/2 cup of coconut vinegar (find it here)
- Himalayan pink salt and black pepper to taste
*You can also use rice wine vinegar, apple cider vinegar or white vinegar mixed with a little bit of coconut sugar.
Preparation:
- Combine all the veggies and vinegar in a large bowl and mix well.
- Season with salt and pepper.
- Cover the bowl and refrigerate for at least one hour before serving to let the veggies marinate in the vinegar and seasoning.
If you’re serving a large group, simply double or triple the recipe to make a bigger batch. I promise, there won’t be any leftovers.
