Easy, Delicious & Healthy Recipe for Gluten-Free Coconut Bread

Gluten-free diets are all the rage these days, which has led to a flood of prepackaged gluten-free products into grocery stores. Unfortunately, many of these products are highly processed, have a huge list of oddly concocted ingredients and a hefty price tag….especially gluten-free bread. To make sure you’re eating a healthy and natural gluten-free bread, I recommend making your own. Here’s a super simple recipe with easy-to-find ingredients that you’ll want to have in your kitchen anyway. SCORE!

THE RECIPE

Ingredients

NOTE: You can cut the measurement of raw honey from 2 tablespoons to 1 if you don’t want to detect much sweetness in the taste of the bread. 

Directions

  1. Preheat the oven to 350 degrees.
  2. In a medium-sized bowl, mix the eggs, coconut oil, sea salt and honey.
  3. Slowly whisk the coconut flour and baking powder into the batter and stir until no lumps remain.
  4. Spoon the batter into a 9 x 5-inch loaf pan that’s been greased with coconut oil. (I recommend using a glass loaf pan like this one, because it lasts forever, doesn’t hold smell or stains and is much easier to clean. I also like using this cast iron wedge pan to make scone-like pieces.)
  5. Bake for about 40 minutes, or until you can insert a toothpick in the middle and it comes out clean.

Just multiply this recipe if you want to make more then 1 loaf. 

A COUPLE THINGS TO NOTE ABOUT THIS RECIPE

You may have seen other gluten-free bread recipes that call for almond flour, oat flour, amaranth or other gluten-free flours . I recommend sticking with coconut flour, because it’s higher in fiber, protein and healthy fat than other gluten alternatives. Plus, it’s rich in trace minerals. As an added bonus, coconut flour is very dense and absorptive, so a little goes a long way. (I love getting you more bang for your buck!)

Also, this bread has a different taste and texture than wheat bread, because it doesn’t contain gluten and yeast. Once you get used to it, I think you’ll like it even better than the wheat versions. I certainly do!
