Apple pie for breakfast? SAY WHAT?!?!?!
Okay, it’s not actually apple pie…but it tastes pretty darn close. The difference between this delicious apple pie quinoa and an actual slice of apple pie is in the nutrition. This dish delivers loads of health-building fiber, vitamins, minerals and antioxidants. It also helps stabilize blood sugar because of its cinnamon content.
Better yet, its sweetness is delivered completely from natural plant-based sources (apples and pure maple syrup).

THE RECIPE
EASY APPLE PIE QUINOA
~ Makes 2 Generous Servings ~
Organic Ingredients:
- 1/2 cup of dry quinoa
- 1 1/2 cups of purified or spring water
- 2 apples
- 2 teaspoons of Ceylon cinnamon
- Pure maple syrup for drizzling
Ninja Preparation:
- Core the apples and chop them into bite-sized pieces. I leave the skin on, but you’re welcome to peel it off if you prefer “skinless” apples.
- Add the quinoa, water and chopped apples to a saucepan and bring the water to a boil on your stovetop.
- Once the mixture is boiling…stir in the cinnamon, shut off the heat and cover the pan. Let it sit for 20-25 minutes, allowing the quinoa to fully absorb the water and the apples to soften.
- Stir well and transfer the mixture to 2 bowls. Or, eat half now and save the other half for another meal.
- Drizzle some pure maple syrup on top and ENJOY! Feel free to add some crunch to the mix with raw nuts, seeds or shredded coconut.
Mmmmmmm, it tastes like you’re eating a divine dessert when you’re actually getting an excellent dose of healthful nutrition.
