When I first started studying nutrition, I dove headfirst into the world of “superfoods.” You’ve probably heard that term before, but let’s take a quick look at what it actually means.
Superfoods are extremely rich in nutrition (like loads of vitamins and minerals) that help you achieve better health, prevent chronic disease and make you feel all-around amazing. Plus, they are super effective for anti-aging.
There are loads of various “best superfoods” lists all over the internet, but it’s likely you won’t find a single one without flaxseeds on it.
Click HERE to learn about the powerful health benefits of flaxseeds, which will illustrate why I highly recommend including them in your daily diet.
The key to making that happen is finding simple and delicious recipes with flaxseeds as the main ingredient.
This recipe for crunchy flax crackers is just what the doctor ordered, and it’s totally gluten-free. Plus, it’s so easy to make!
THE CRAZY EASY RECIPE
Ingredients:
- 1 cup of ground flaxseeds (flaxseed meal)
- 2 tablespoons of chia seeds
- 1/2 teaspoon of himalayan pink salt
- 1/2 cup of water
- Optional: 2-3 teaspoons of dried spices and herbs of your choice (garlic powder, Italian seasoning, paprika, onion powder, etc.)
Preparation:
- Preheat the oven to 370° F.
- Line a large baking sheet with unbleached parchment paper.
- Combine all the dry ingredients in a mixing bowl. Slowly stir in the water and mix to form a dough-like consistency.
- Scoop the mixture onto the lined baking sheet. Cut another pan-sized piece of parchment paper and lay it on top of the dough. Then, use a rolling pin to roll out the dough between the two pieces of parchment paper until it’s very thin and even throughout. (If it’s too thick, the crackers won’t get crunchy.)
- Once the dough is rolled into a thin and even layer, remove the top piece of parchment paper and use a sharp knife to make cuts in the dough where you want to divide it into crackers.
- Bake for 30-35 minutes. Keep an eye on the crackers toward the end to make sure they don’t burn.
- Remove the pan from the oven and allow it to cool completely before breaking up the crackers.
- Store any leftovers in an airtight container for up to 2 weeks.
These crackers are so crunchy and tasty, you may be surprised that you actually made them yourself with such little effort!
I like eating these crackers plain, or you can smear them with guacamole or hummus for a kick of healthy flavor.
Cheers to enjoying homemade crackers that are simple, healthy and delicious!
With love and gratitude,
Kandi
