HOW TO MAKE THEM

These are the easiest cookies you’ll ever make..no mixing, measuring or baking is required!

STEP 1: Remove the core from an apple and slice it into rings (invest in an apple corer like this to make this step a snap!). The apple rings become your cookies.

STEP 2: Smear the apple cookies with a thin layer of your nut or seed butter of choice (sunflower seed butter, almond butter, cashew butter, etc.). Be sure to choose a quality butter without any added sugar, oil, salt or preservatives.

STEP 3: Sprinkle the top of the apple cookies with one or more of the following healthy options to add crunch and flavor:

  • Raw walnut or pecan pieces for crunch.
  • Dark chocolate chips for chocolate flavor. (My go-to brands for clean chocolate chips are Hu, Equal Exchange and Enjoy Life.)
  • Unsweetened shredded coconut for a coconut flare.
  • Raw pumpkin seeds for crunch.
  • Raw sunflower seeds for crunch.

If you must add more sweetness, use natural sources like organic raisins, a drizzle of pure maple syrup or chopped dates.

ENJOY!
