2-Ingredient Frozen Pineapple Whip Recipe (100% Clean & Dairy Free!)

Have you ever heard of the magical treat served at Disneyland called “Dole Whip?” It’s a refreshing frozen treat that tastes like pineapple soft serve ice cream, and it’s known for totally hitting the spot on a warm day.

You can easily create this magical treat right in your own kitchen with two natural ingredients. Better yet, the recipe is clean, healthful and totally dairy-free!

Here’s just some of the nutrition that’s packed into this delicious recipe:

Pineapple

  • Excellent source of vitamin C and manganese.
  • Solid source of vitamins B1 and B6, vitamin B5 (AKA pantothenic acid), folate and fiber.
  • Improves immune function and fights inflammation in the body.
  • Potent digestive aid due to its high content of a digestive enzyme called bromelain.

Coconut Milk

  • Rich in fiber and vitamins C, E, B1, B3, B5 and B6.
  • Loaded with minerals including iron, selenium, calcium, magnesium and phosphorous.
  • High in medium chain saturated fatty acids (also known as medium chain triglycerides / MCTs), particularly one called lauric acid. Our bodies convert lauric acid to a substance called monolaurin, which is a highly beneficial antiviral and antibacterial compound that destroys a wide variety of disease-causing organisms in the body.

THE RECIPE

FROZEN PINEAPPLE WHIP RECIPE

~Makes 4 to 6 Servings~

Ingredients:

  • 5 cups of frozen pineapple chunks
  • 1 cup of coconut milk (It’s really easy to make your own!)

ABOUT THE INGREDIENTS: You could use almond milk instead of coconut milk, but coconut makes the whip creamier and enhances the sweetness of the pineapple. I buy frozen pineapple chunks from the healthy freezer section for convenience, but you can also buy a whole pineapple to cut and freeze yourself if you prefer. The pineapple will make the whip very sweet on its own. If you absolutely must add sweetener, use a little pure maple syrup. 

Preparation:

  • Put the ingredients into a high-powered blender or food processor. (I use a Blendtec.)
  • Blend until the consistency becomes smooth and creamy. You will have to stop several times and scoop the pineapple down.
  • Pour the whip into serving containers, garnish with pineapple chunks (optional) and enjoy!

NOTE: This pineapple whip is best enjoyed right away, because it comes out of the blender like a beautiful soft serve ice cream. If you have leftovers, it’s totally okay to freeze them…just know the mixture will become very solid when frozen, and you’ll need to let it thaw a bit before eating it.

When I have leftovers or am making this whip in advance of a social gathering, I like to put it in glass ramekins as shown in the photo below. This helps with portion control and makes the whip easy to store in the freezer:
