Cucumber Avocado Roll-Ups

If you’re looking for a unique appetizer that will make you look like a culinary artist at your next gathering, these avocado roll-ups will do the trick!

They are filled with a blend of avocado, fresh basil and tangy lime with a sprinkle of paprika for color and gentle spice. Not only are they delicious, they are amazingly healthy and are light enough to satisfy hunger pangs without filling you up before the main course.

Though they look a little on the fancy side, they are deceptively easy to put together as long as you have a vegetable peeler for cutting the cucumbers into thin strips.


THE RECIPE

Ingredients:

  • 2 large cucumbers
  • 1 medium avocado
  • 1 cup of fresh basil leaves
  • 1 clove of garlic, coarsely chopped
  • 2 teaspoons of fresh lime juice
  • Himalayan pink salt and black pepper to taste
  • Ground paprika for garnish
  • Toothpicks

Preparation:

  1. Use a vegetable peeler (buy here) to peel the cucumbers into long, thin slices.
  2. Place the flesh of the avocado, basil, garlic, lime juice, pink salt and pepper in a food processor or high-speed blender and pulse until the mixture is smooth and creamy.
  3. Spread the avocado mixture evenly onto each cucumber slice.
  4. Pick up one end of the cucumber slice and roll it loosely around the filling. End with the seam on the bottom and secure it with a toothpick.
  5. Garnish with paprika. (NOTE: You can skip this step if you don’t have paprika on-hand, or if you don’t care for the taste.)
