Easy Plant-Based Ice Cream Recipe: Creamy Dreamy Chunky Monkey Sunbutter Ice Cream

I SCREAM, YOU SCREAM, WE ALL SCREAM FOR ICE CREAM!!!

Especially when it’s a super easy, dairy-free / plant-based recipe you can whip up in minutes.

I call this recipe my “creamy dreamy chunky monkey sunbutter” ice cream. You can make it simply with the “creamy” ingredients. OR, you can chunk it up with a few additional goodies.

It tastes like a cold, crunchy peanut butter treat…but it’s totally peanut-free. The natural plant-based ingredients make it a healthy treat instead of a health-sabotaging cheat.


THE RECIPE

CREAMY DREAMY CHUNKY MONKEY SUNBUTTER ICE CREAM

~ Makes About 3 Cups ~

Ingredients:

  • A 13.5-ounce can of full-fat coconut milk (Native Forest is my favorite brand – Simple formula.)
  • 3/4 cup of sunflower seed butter (You could also use cashew or almond butter.)
  • 3-4 tablespoons of pure maple syrup
  • Optional for chunk: 1/2 cup of unsweetened coconut shreds or flakes
  • Optional for chunk: 1/4 cup of raw walnuts
  • Optional for chunk: 1/4 cup of dairy-free chocolate chips (Hu, Equal Exchange and Enjoy Life are my go-to brands.)

How to make it:

  1. Put the coconut milk, sunflower seed butter and maple syrup in a food processor and blend until smooth and creamy.
  2. If including any “chunky” ingredients, add them to the food processor and pulse several times until they are broken up and mixed well with the ice cream.
  3. You have 2 options for the final step:

OPTION 1: Invest in small glass containers with lids that hold 3/4 to 1 cup, so you can immediately pour the ice cream mixture into portion-sized cups to freeze. This is my preferred and highly-recommended method.

OR

OPTION 2: Line a glass dish that has a tight lid and holds at least 3 cups with unbleached parchment paper, and pour the ice cream mixture inside. Secure the lid and put the dish in the freezer until the ice cream is frozen.

TIP: When you’re ready to enjoy the ice cream, take the container out and let it sit for about 10 minutes to allow the ice cream to melt a bit. It’ll be a lot easier to dig in that way.
