Easy Cauliflower Gravy Recipe (Free of Dairy & Gluten!)

Though gravy seems to get the most action around Thanksgiving time, this amazingly delicious and healthful recipe for cauliflower gravy is a great condiment to enjoy any time of the year. And it’s so easy to make!

The star of this recipe, cauliflower, is a fantastic cruciferous vegetable that’s bursting with nutritional goodness and health benefits. For example:

1. Fights cancer.
Cauliflower contains a sulfur compound called “sulforaphane” that has been shown to kill cancer stem cells and slow tumor growth. This is a big deal, since some researchers believe eliminating cancer stem cells may be the key to controlling cancer.

2. Combats inflammation.
Inflammation can lead to significant damage to the body and lead to diseases like cancer. Cauliflower contains loads of anti-inflammatory nutrients like indol-3-carbinol (also known as “I3C”) to help keep inflammation in-check and help prevent disease.

3. Loaded with vitamins and minerals.
One serving of cauliflower contains 77% of the recommended daily value of vitamin C. It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium and manganese. BOOM!

THE RECIPE

Ingredients:

  • 1/2 head of organic cauliflower, cut into florets (or 2 cups of cauliflower rice)
  • 1 & 1/2 cups of organic vegetable broth or mushroom broth
  • 1 clove of organic garlic
  • Himalayan pink salt to taste

Directions:

  1. Place the cauliflower, broth and garlic in a saucepan. Bring to a boil and then reduce the heat to simmer for 15-20 minutes until the cauliflower is very tender.
  2. Pour the mixture into a high-speed blender (I use a Blendtec). Cover the lid of the blender with a towel, so you don’t burn yourself while blending. Blend on high for about a minute, or until the gravy is completely smooth. If it’s too thick, thin it out by adding a little water or more broth.
  3. Add salt to taste and ENJOY!
