Plant-Based Cauliflower Cheese Recipe

It ain’t easy being cheesy…but it sure can be healthy when the cheese is made with cauliflower!

You may have seen my other delicious plant-based cheese recipe that’s based with potatoes and carrots. This is another creamy and delicious option that’s based with health-building cauliflower.

For any skeptics reading this, let me just say that my sig other (Wayne) is the ULTIMATE dairy lover who doesn’t always buy into my plant-based alternatives. And he LOVES this plant-based cheese so much that I have to cut him off when I make it, so there’s enough left for me!

THE RECIPE

CREAMY PLANT-BASED CAULI CHEESE

~ Makes more than 3 cups  ~

Organic Ingredients:

  • 1 head of cauliflower, chopped into florets
  • 1 cup of water or vegetable broth
  • 1/2 cup of nutritional yeast
  • 1 tablespoon of lemon juice
  • 1 tablespoon of apple cider vinegar
  • 2 teaspoons of onion powder
  • 2 teaspoons of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Himalayan pink salt
  • Optional: If you want to make a spicy cheese, toss in 2-3 hot peppers.

Ninja Preparation:

  1. Steam the cauliflower until it’s tender enough to be easily pierced with a fork. (I use the “Steam” setting on my Instant Pot for 10 minutes.)
  2. Put all the ingredients into a high-speed blender and blend until smooth and creamy.
  3. Taste and add more spices / seasoning if necessary.

Below is a look at the finished product. This cheese tastes great with bean-based pasta, veggies, crackers and chips.
