Healthy Caramel Recipe (Clean, Plant-Based & Free of Refined Sugar!)

Healthy caramel? Does it exist? Yes, it does if you make it!

I was pleasantly surprised to discover you can make delicious and healthy caramel using dates, salt and 3 other simple ingredients. It’s luscious, creamy and you can make it as thick or thin as you want.

There is ZERO cooking involved and it’s ready in minutes!

It tastes amazing on apples, raw nuts and anywhere else you like to drizzle caramel. It’s also quite tasty as a plain caramel treat all on its own.

THE RECIPE

HEALTHY CARAMEL

~ Makes about 2 cups ~

Ingredients :

  • 2 cups packed of pitted medjool dates (be sure to pack the cups full when measuring)
  • 1/4 cup of sunflower seed butter or tahini AKA sesame seed butter
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of Himalayan pink salt
  • Around 1 cup of diluted coconut milk – the exact amount depends on how thick you want the caramel to be

How to make it:

  1. Soak the 2 cups of dates in purified water for 10 minutes. This will make them much easier to blend.
  2. Drain the water from the dates and toss them in a high-speed blender or food processor. Add the sunflower seed butter or tahini, vanilla, salt and half of the coconut milk. Begin blending.
  3. Slowly add more coconut milk until you achieve the desired thickness and the caramel is smooth.
  4. Enjoy!

LEFTOVERS: Store any leftovers in an airtight container in the refrigerator for up to 7 days.

This caramel tastes amazing with fresh apples slices.

I also like to enjoy it straight for a creamy caramel treat!
