Creamy Avocado & Cilantro Dressing (Dairy-Free Recipe!)

It’s amazing how a creamy and delicious dressing can take a salad to the next level. It’s even better when that dressing is loaded with health benefits!

This creamy avocado and cilantro dressing recipe is light, refreshing and delivers some serious nutritional value. It’s more than just a salad dressing, though…it also works great for veggie dip, sandwich spread, and a dairy-free sour cream substitute for tacos and baked potatoes.

This recipe features some extremely nutritious ingredients:

Avocado

  • Great source of multiple vitamins (B5, B6, C, E and K), potassium and folate.
  • Loaded with heart-healthy monounsaturated fatty acids (mainly oleic acid) that reduce inflammation in the body.
  • Excellent source of fiber that’s very easy to digest.

Cilantro

  • Binds to heavy metals in the body and cleans them out.
  • Has strong antioxidant properties, which protects against free radicals in the body and helps prevent oxidative stress that can lead to serious health issues like cancer, heart disease, arthritis and Alzheimer’s disease.
  • Naturally calms nerves to lower anxiety and improve sleep.

Zucchini

  • High source of antioxidants and vitamin C that boost your immune system.
  • Contains a type of fiber called “pectin” that’s linked to improving heart health and lowering bad cholesterol.
  • Excellent source of potassium that supports heart health and helps lower blood pressure.

Lemon Juice

  • Stimulates liver function to remove toxins from the body.
  • Loaded with vitamin C to improve immune function and heal the body.
  • The negative ions in lemon juice naturally increase energy and improve mood.

THE RECIPE

CREAMY AVOCADO & CILANTRO RECIPE

~ Makes About 2.5 Cups ~

Ingredients:

  • Flesh of 1 large avocado
  • 2 cups of zucchini, peeled and chopped
  • 1 cup of purified water
  • 1/4 cup of fresh cilantro leaves
  • 2 Tablespoons of pure lemon juice
  • 1 Tablespoon of pure maple syrup
  • Himalayan pink salt and black pepper to taste (You can also add herbs and spices like garlic and cayenne pepper to create your favorite flavor profile.)

ABOUT THE INGREDIENTS: Use organic ingredients whenever possible, so your food is free of GMOs and health-harming chemicals like pesticides, herbicides and larvicides.  

Preparation:

  1. Put all the ingredients into a high-speed blender and blend until smooth.
  2. Taste the blended mixture and add more seasoning (salt, pepper, etc.) if necessary.
  3. If you want a thinner consistency, add a little more water at a time until the desired consistency is reached.

LEFTOVERS: Will keep well for 5 days in an airtight container in the fridge. Stir before using.

If you leave the dressing a bit thicker by not adding extra water, it works wonderfully as dip for veggies!

As I mentioned before, you can also use this dressing to top tacos or baked potatoes in place of sour cream, or as a sandwich spread.
